Enjoy the flavor of Moose Tracks ice cream in a creamy easy-to-make vanilla fudge swirled with chocolate ganache and layered with mini peanut butter cups.

Moose Tracks is one of my favorite ice cream flavors. Chocolate fudge is swirled with creamy vanilla ice cream and it's packed with mini peanut butter cups. It's amazing! If you haven't tried it, I highly recommend it.

The combination of vanilla, chocolate, and peanut butter is such a winning combination that I used it as inspiration to make this creamy fudge.

This fudge has layers of vanilla fudge swirled with creamy chocolate ganache and lots of mini peanut butter cups. And, it's easy to make using just a few ingredients.

Moose Tracks Fudge Ingredients

white chocolate chips - I recommend using Nestle Premier White Morsels. They have a nice vanilla flavor, produce creamy fudge, and are reasonably priced. These chips are compound chocolate (made with palm kernel oil) not pure white chocolate (made with cocoa butter) so the fudge will firm up nicely. If you use pure white chocolate, you will need to add a bit more so that your fudge firms up well too.

sweetened condensed milk - I'm not a big fan of having to stand over a pot of boiling sugar and then worrying my fudge won't turn out, so I use sweetened condensed milk in place of sugar, milk, and butter. The milk produces an amazingly creamy and delicious fudge that will never crystalize.

vanilla - Add a splash of pure vanilla extract to give your white chocolate fudge a deeper vanilla flavor.

semi-sweet chocolate - Use a semi-sweet chocolate bar, finely chopped, or your favorite chocolate chips to make the chocolate fudge swirl. I used Hershey's Special Dark Chocolate Chips as they are my favorite.

heavy whipping cream - This high-fat cream will add a luxuriously creamy texture and rich flavor to the chocolate fudge swirl (chocolate ganache).

mini peanut butter cups - I used Trader Joe's Mini Peanut Butter Cups. They are the perfect size to sprinkle in this fudge. You could also use Reese's Cup Minis. They are larger so you may want to cut them in half.

Make the chocolate fudge layer.

I chose to swirl in chocolate ganache not only because it's delicious but also because it is liquid when warm but it firms up when cool. It can easily be swirled into the vanilla fudge but will firm up nicely along with the fudge.

It's easy to make too. Just stir together heavy whipping cream and chocolate together in a microwave-safe bowl or measuring cup.

Heat for two 15-second bursts of high power, stirring after each, until melted, smooth, and creamy. Then, set it aside while making the vanilla fudge layer.

Make the easy vanilla fudge layer.

Pour the white chocolate chips into a large microwave-safe bowl and heat on high power for 1 minute. They won't look melted at all but they will have softened slightly.

Remove and pour the sweetened condensed milk over the chips. Stir them together, then microwave at 70% power for 90 seconds. Let the bowl rest in the microwave for 3 minutes. Then, remove and stir until melted. If the chips are not all melted, let the bowl rest for another 3-5 minutes and stir again.

If needed, you can heat it at 70% power for 10-second increments, letting the bowl rest, then stirring if the chips are not all melted.

Stir in the vanilla extract until smooth and creamy.

Pour the fudge into an 8-inch baking pan.

I recommend lining your square 8-inch baking pan with non-stick aluminum foil for the easiest removal. You can also use regular foil very lightly sprayed with baking spray.

Pour about ⅔ of the vanilla fudge into the pan and spread it into an even layer. Reserve the rest for the top layer.

Layer the Moose Tracks Fudge.

Immediately drizzle on ⅔ of the chocolate ganache and use a toothpick or skewer to swirl it into the vanilla fudge.

Quickly sprinkle about ⅔ of the mini peanut butter cups over top.

Reheat the vanilla fudge for 5-10 seconds, spread it over the peanut butter cups, then swirl in the remaining chocolate fudge. I didn't reheat the vanilla fudge and as you can see my fudge was a little too cool to easily swirl in the remaining chocolate ganache. It turned out alright but it did have some cracks on top.

Ingredients

  • 3 tablespoons heavy whipping cream
  • 3 ounces semi-sweet chocolate (finely chopped bars or chips)
  • 24 ounces white chips (Nestle Premier White Morsels (or 28 ounces pure white chocolate)
  • 14 ounces (1 can) sweetened condensed milk
  • 1 teaspoon pure vanilla extract or vanilla bean paste
  • 1 ⅓ cups mini peanut butter cups

Instructions

Chocolate Ganache (dark chocolate fudge layer)

  1. Combine the semi-sweet chocolate and heavy whipping cream in a microwave-safe bowl or measuring cup.

  2. Heat for two 15-second bursts of power, stirring after each, until melted and smooth.

  3. Set aside while making the vanilla fudge.

Vanilla Fudge Layer

  1. Pour the white chips into a large microwave-safe bowl and heat at high power for 1 minute.

  2. Remove the bowl from the microwave and stir in the sweetened condensed milk.

  3. Heat at 70% power for 90 seconds.

  4. Then, let the bowl sit in the microwave for three minutes.

  5. Remove and stir until melted and smooth.

  6. If all the chips have not melted, let the bowl rest for 3-5 minutes, then stir it again.

  7. Only if needed, heat the bowl for 10-second bursts of 70% power, resting a few minutes, then stirring again until all the chips are melted.

  8. Stir in the vanilla until creamy and smooth.

Layering the Moose Tracks Fudge

  1. Pour about ⅔ of the vanilla fudge into a non-stick tin foil-lined 8-inch square baking pan.

  2. Spread it into an even layer.

  3. Pour ⅔ of the semi-sweet chocolate ganache over the vanilla fudge and use a toothpick or skewer to swirl it into the vanilla fudge.

  4. Immediately, sprinkle 1 cup of the mini peanut butter cups over the fudge.

  5. Reheat the remaining vanilla fudge in the microwave at 70% power for 5-10 seconds just to rewarm it. Stir it, then pour it over the peanut butter cups.

  6. Drizzle the remaining chocolate ganache over top and use a toothpick or skewer to swirl the chocolate and vanilla fudge together.

  7. Cover the pan with plastic wrap and chill the fudge for about 2 hours or set the fudge on your counter for about 4 hours until the fudge firms up.

  8. Cut the fudge into squares.

  9. Serve or package for gifts.

Recipe Notes

Storage:

Store this Moose Tracks Fudge in an airtight container at room temperature for up to a month.

Freezing this fudge:

Wrap the fudge well in wax paper or tin foil then place it in a large zip-top bag and freeze for up to 3 months.

Making the fudge on the stovetop:

If you don't have a microwave, you can make the fudge on the stovetop.

Simply, melt the chocolate for the ganache or the vanilla fudge over LOW heat. Stir the fudge until 75% of the chips have melted, then remove it from the heat, let it rest a few minutes, then stir until smooth.
